Hard Boiled Eggs
- For best results let eggs sit out of fridge for at least 20 minutes
- Fill pot with enough water to cover eggs by an inch
- Heat pot on high heat
- When water reaches a rolling boil turn off the stove but leave the pot on the hot burner (for gas or induction stoves, reduce heat to low-medium)
- Add the eggs one by one, carefully with a slotted spoon
- Cover pot and set a timer for exactly 12 minutes
- When the timer runs out quickly bring the pot to the sink and run cold water into the pot while slowly and pouring out the hot water
- When the water in the pot is fairly cold add lots of ice and let the eggs sit in the ice bath for 20-30 minutes
- Refrigerate eggs and eat within a week
